Welcome to Just Sourdough!
As the name suggests, this is all we will be making during this full day workshop; organic sourdough bread, baked the way it has been for thousands of years. Simply flour, water, wild yeast, a pinch of salt, and nothing else.
The course begins with a demonstration of how to maintain the starter (the wild yeast). This forms the basis for sourdough, and once made can be looked after at home, possibly for many years to come. Some starters have been around for decades and passed down from one generation to the next!
Next we move on to the bake: using the starter to create your dough; mastering the correct techniques to improve gluten development; different shaping methods; transferring the dough to the banneton; proofing; scoring and finally baking.
This workshop is suitable for all levels of experience, will last for about 5 hours, running from 10 am to 3pm allowing parents to do school drop off and pick up and includes lunch and refreshments.
You should be aware that due to the extended time required to make sourdough from scratch, (including the proofing times), it will not be possible to bake your own loaf from start to finish. Rather we will go through the steps using the freshly prepared dough that I will have made and proofed the night before. You will of course be able to take the finished loaves away with you, as well as the dough that you have already prepared in my kitchen, to bake in yours.
Aprons, ingredients and all equipment will be provided. You will also go home with a jar of starter, banneton, scraper and a bread scoring tool (together worth £55) so that you can start baking straight away.
You will experience baking every stage of a sourdough and at the end of the day you will take home a freshly baked loaf as well as the fresh dough that you will have made on the day.
